Banjo started his career in hospitality in Adelaide at his parent’s restaurant, before moving to London to gain more experience. Upon returning to Australia, he headed to Sydney, where he spent a number of years working at some of the countries top restaurants. Banjo then moved to Melbourne and became Restaurant Manager and Head Sommelier at the well-regarded Attica. Banjo currently works on numerous wine-related projects – a wine import and distribution business (REAL Wines), an online wine business (The Wine Gallery), a wine bar (Bar Liberty) as well as enjoying a glass or two in his spare time.
Born into the world of food at an early age, Eleena Tan spent most of her youth at her parent's restaurants, serving customers, taking orders and working her way up through the business. Eleena brings with her years of experience and insights in hospitality, operations, master planning and retail consulting to clients who wish to deliver innovative food concepts, that are not only exciting but are also commercially viable and sustainable. Her value is her breadth of knowledge, connections, and relationships with suppliers and industry. When Fleur Studd founded Melbourne Coffee Merchants nearly a decade ago, she was one of the first importers to bring in specialty grade, traceable, fresh crop coffees into Australia. Over the last 9 years, Fleur, along with her team, have worked tirelessly to improve the quality of coffee in Australia by sourcing the very best quality coffees they can find and sharing these coffees and the extraordinary stories of the people behind them, with quality-focused roasters throughout Australia. Fleur is also the co-founder of Market Lane Coffee, a roaster and retailer that has played a pivotal role in helping redefine what coffee is and can be to many Melbournian consumers. Market Lane Coffee now has 6 shops in Melbourne and over 60 staff.
Michael Tan brings with him over 20 years of experience in brand, design, interiors and concepts. He has worked with Fortune 500 companies from diverse industries, from cars to mobiles, beer to dairy and property developers to national franchise food brands. Shane Delia is best known as Chef and Owner of restaurants Maha and Biggie Smalls. Shane is a television presenter, host of his own TV shows Spice Journey and Recipe For Life, author of Maha Middle Eastern Home Cooking and Spice Journey: Adventures in Middle Eastern Cooking and a charity ambassador. 2018 has Shane flashing his trademark grin across television sets as a presenter on Channel 9 Postcards, Victoria’s most popular travel and lifestyle show. Shane takes audiences to the very best local and regional food destinations Victoria has to offer. Airing in January 2018, Shane’s newest TV series Recipe For Life is a juggling act of deliciously epic proportions. The eight-part series sees Shane find his balance between business, health and family.
